Tucked away in the heart of Val d’Illasi, just east of Verona, there lies a winery that has become synonymous with intensity, precision, and absolute dedication to quality: Dal Forno Romano.

Though this estate doesn’t reside within the Tuscan hills, its name resonates powerfully across every serious wine collector’s cellar—and for good reason. Dal Forno has redefined what it means to produce Amarone, elevating it from a traditional local wine to a world-class masterpiece of structure, richness, and longevity.

The Story: From Tradition to Reinvention

The journey began in the 1980s, when Romano Dal Forno, a young farmer with a dream, decided to revolutionize his family’s vineyard. Inspired by a chance meeting with the legendary Giuseppe Quintarelli, Dal Forno set out to create something extraordinary—not by copying tradition, but by refining and redefining it.

Today, together with his sons Marco, Luca, and Michele, Romano runs a state-of-the-art winery where tradition and cutting-edge technology co-exist in perfect harmony.

What Makes Dal Forno So Unique?

Dal Forno Romano is not just about making wine—it’s about pushing the limits of what’s possible in viticulture and oenology. Here’s what sets them apart:

1. Radical Vineyard Management

Romano understood early on that great wine begins in the vineyard. Yields are brutally low—just 3,000 vines per hectare, trained to reduce production per vine and intensify flavor. Vines are treated with extreme care, and any sign of disease or imperfection is swiftly dealt with. The vineyard itself becomes a laboratory of perfection.

2. Meticulous Appassimento

Dal Forno is famed for his Amarone della Valpolicella, a wine made through the ancient appassimento technique—drying grapes after harvest to concentrate sugars and flavors. But here, nothing is left to chance. Grapes are dried in rooms with precise temperature and humidity control, ensuring consistency and purity. The drying process can last up to three months, during which the grapes lose around 40% of their weight.

3. A Technological Temple

Step inside the winery and you’ll be greeted not by old oak barrels and dusty cellars, but by a gleaming, high-tech cathedral of stainless steel and French oak. Every stage of production is carefully engineered to minimize oxidation and preserve freshness. Even the bottling is done in a nitrogen-rich environment.

4. Aging with Patience

Dal Forno wines are aged for at least 24 months in new French oak barriques, followed by several years in bottle before release. These are wines built for time—structured, intense, and elegant. An Amarone from Dal Forno can easily age for 20, 30, even 40 years, evolving with every passing decade.

The Wines: Power Meets Elegance

  • Amarone della Valpolicella: A monument of a wine. Rich, dense, yet vibrant with notes of black cherry, cocoa, licorice, tobacco, and spice. It’s a wine that commands attention and rewards patience.
  • Valpolicella Superiore: Don’t be fooled by the name—this is not your everyday Valpolicella. Made from the same grapes as the Amarone, and with similar care, this wine offers freshness and structure in a more approachable style.
  • Recioto della Valpolicella: A sweet red that balances opulence with finesse. Perfect with aged cheeses or dark chocolate.
